I was in my favourite organic shop to buy tomatoes before the end of the season (ok, it’s also the closest to my place, but it’s a great place) when I saw a box of beautiful, bright red/pink and heavy pomegranate. I didn’t hesitate for long before taking one with me.
I take the occasion to write down this recipe, which is so simple that I’m not sure it deserves to be called a recipe. Anyway I like a lot the combination of sweet softness of the coconut milk and the sour taste of pomegranate.
Pomegranate & coconut milk
Ingredients (for 3)
- 1 pomegranate
- 200 ml of coconut milk
Peel the pomegranate. My method consists in cutting the fruit into four pieces. Then, holding one quarter above a bowl with the tip of my fingers, seeds facing down (my hand) and skin facing up, I hit it with a wooden spoon and the seeds go easily.
In a nice plate, pour a bit of coconut milk, then add some pomegranate.
That’s all. You can eat yout dessert.
